Starting next spring, two of Thomas Keller's eateries, Per Se and The French Laundry, are changing the way they do business. They're joining the growing rank of high-end restaurants using a new reservation system, Tock, that requires guests to pay for their tasting menu at the time of booking. It's basically buying a dinner ticket!
