Crème brûlée is one of my all-time favorite desserts. I mean, is there anything more satisfying than breaking into that crunchy, sugary crust, only to be greeted by a rich, creamy custard? I don't think so.
This recipe for matcha breakfast brûlée still promises all the best components of the classic dessert, but with a few healthy swaps to make it a suitable way to start your day.
Unlike traditional crème brûlée, this recipe doesn't call for heavy cream or eggs, and you don't need to bake it in the oven. You just need some Greek yogurt, latte-grade matcha, honey, vanilla extract, and sugar — oh, and a kitchen torch, of course.
Once you've distributed the yogurt mixture among four small ramekins, you sprinkle the tops with sugar and use your torch to achieve crème brûlée's signature crackly crust.
And just like that, dessert for breakfast is served!
