Ryan had to work on Memorial Day, so our weekend was not a particularly long one, but we made the most of it and had fun at my friend Carrie’s parents’ house on Lake Norman on Sunday.
Their house could not have been more stunning and the set up was perfect for four families with babies in tow. We all brought pack and plays and baby monitors with us so the babies could nap while we were there which allowed us to hang out all day long. We’re so used to hanging out in two-hour increments thanks to the little ones, so to have a whole day together felt extra special!
I truly had to hold back from snapping pictures of every room of Carrie’s parents’ place because the interior of their home was almost as gorgeous as the stunning lake views from their backyard. Carrie’s mom is an interior designer and it shows!
We spent most of the day in the backyard and had blankets and a bucket of toys spread out for the babies to play with while the adults hung out and chatted away over food, wine and beer.
Some of the guys took jet skis out which I’d love to do next time!

We all brought dishes to share for an afternoon barbeque and I had no trouble filling up my plate with grilled chicken, potato salad, green beans, berries, chips and guacamole.
I made a kale salad and a batch of triple layer chocolate mint bars for the party and naturally forgot to snap pictures of both dishes. I loosely followed Gina’s recipe for kale salad and combined avocado, almond butter and coconut aminos to make a “dressing” to use to massage the kale before tossing it with crushed roasted almonds, celery and chopped green onions. It was so good and I am hoping to make another batch for lunch this week.
The chocolate mint bars were way too addicting and I have my friend Chandra to thank for that recipe! We texted back and forth after she posted a picture of the bars on her Snapchat and I immediately requested the recipe. They did not disappoint and were a refreshing dessert thanks to the pop of peppermint in the middle of the bars. I hope to make them again soon and photograph everything so I can share it with you guys. So good!
Our day wrapped up around 6 p.m. when all the babies started to get a little fussy and let us know bedtime was near, so we headed out and put Chase to bed after a quick bath when we arrived back home. I’m pretty sure I was sound asleep by 9:45 p.m. like a total rockstar! It was a great Sunday!
