21 Things to Cook in a Cast Iron Skillet on the Grill (or Over the Fire) — Recipes from The Kitchn

No kitchen is complete without a cast iron pan, and that's especially true if you also own a grill. You can adapt just about any stovetop cast iron pan recipe to be prepared on the grill. Yes, even if you have a charcoal grill. All it takes is some time to preheat the grill and the pan, and then you can get cooking. It's also a good idea to invest in a simple surface thermometer so you know just how hot your pan is. Otherwise, follow the instructions for heating oil just like you would on the stove and have the grill lid handy — it's essential for recipes that are traditionally baked.

Whether it's imbuing a smoky tinge into a skillet hash of turnips and eggs or making the fast dinner of classic pork tenderloin outside with a beer in hand, here are 21 of our favorite cast iron pan recipes to try on the grill.

While you don't necessarily need the cast iron pan to cook this flank steak on the grill, it helps to keep the stuffing from falling into the flames and prevents flare-ups. This recipe also provides some good tips for how to preheat your cast iron pan on the grill.

Frittatas are great for the grill — especially since you can recreate the finishing step of the oven by simply closing the lid on the grill. Just be sure that your cast iron skillet is well-seasoned to prevent the eggs from sticking.

When cooked on the grill or even over a campfire, we like to rename this dish "smoky, cheesy corn bake." We won't blame you if your mouth is watering right now.

Cornbread is one of those recipes that just tastes better when it's baked over an open flame. And we'll always take the outdoor variety over a gas stove any day. A closed lid is key to getting this to bake through.

If you're willing to fire up the grill for breakfast, try making this crispy hash brown pancake. Since it's harder to maintain a consistent temperature on your grill, monitor this more frequently than you would when cooking it in the oven.

If your grill is large enough, you can keep your vegetable broth simmering off to the side in a Dutch oven. Preparing this on the grill gives a smoky flavor that you don't normally get in vegetarian dishes.

The trick to making these nachos is to load up your cast iron skillet with chips and cheese and then stick them on the grill and close the lid. We guarantee you won't end up with soggy nachos.

These pork chops get two rounds in your cast iron pan: first to sear them, and second to cook them in the rhubarb sauce. Make sure you use a meat thermometer to make sure they are fully cooked.

We love this dish for a camping breakfast, mostly because you can prep all of the hash ingredients before you set out, and they don't require much refrigeration. Then it's easy to cook safely over a campfire.

Preheat the skillet while the grill is warming up, then simply sear the sausage before adding the tomatoes to blister, and the gnocchi to cook at the end. This is the perfect backyard dish to break the barbecue mold.

Layer the enchiladas in a cast iron skillet, then cover them with cracked eggs before cooking for an unforgettable breakfast. We wouldn't blame you if you decided to make it for lunch or dinner either.

While you can roast your peppers on the grill directly, putting them in a cast iron pan ensures that you won't lose any between the grill grates.

This dish involves a fair amount of waiting to get the rice to crisp up in the skillet, and we find it easier to wait when standing outside by the grill instead of inside at the stove — especially if we have friends over, and a drink in hand.

Yes, you can make a Dutch baby pancake on the grill. You'll just want to make sure you have a good sense of the temperature, and that you keep a close eye on it. This is ideal for a gas grill, where you can more precisely control the temperature. Don't forget to close the lid so it "bakes."

Instead of preheating your oven, preheat your cast iron pan on your grill with the lid closed, and use the surface thermometer to check when it reaches the right temperature. Be sure to use a meat thermometer toward the end to check the internal temperature of the tenderloin.

Not all pancakes are created equal, and that's never been more true than with this savory Dutch baby. The skillet pancake gets a dose of flavor from black beans, tomatoes, onions, and plenty of cilantro.

The ingredient that makes this steak so memorable is the pomegranate molasses that you use as the glaze. Whether you make it on the grill, stove, or campfire, you'll want to make it again and again.

There are plenty of ways to make pizza on the grill, and this is one of our favorites. The cast iron pan makes the crust nice and crispy, without the worry that it will get too charred.

These chicken tenders are traditionally baked in the oven, but work just as well in a closed grill. Just check them a bit more frequently to make sure they aren't cooking too quickly.

Donuts on the grill? Absolutely! One of the best things about deep-frying outside, whether it's donuts or fried chicken or sweet potato chips, is that oil splatter is much less of a problem since you're in the great outdoors. You can even make these apple fritters on your grill.

Okay, this is technically in a cast iron Dutch oven, but we couldn't leave it off this list since it is a great recipe to try on the grill. It's one of the few ways we're able to bake bread during the summer months since it doesn't make our air conditioners work overtime.
